You can get the list of tables in a patch or MP using the PSPROJECTITEM table. I'm not sure what method you are using to apply changes to your environment, but changes applied should be part of a project and the project will tell you the tables it includes. If you run compare and report on the project before applying the changes, you will also have the list of tables that has been modified/new and what is being modified.
