Didn't think this is worth it to be a blog post by itself but thought I can still share it with the rest of the community as a forum topic.
This is related to date format when writing data using file layouts. Sometimes, even though your file layout indicates your desired date format, it will still show up weird on your file. Fixing this is pretty simple, all what you have to do is wrapping your date in the select statement as such:
